A fragrant, rich and deeply comforting mug of steaming chai is one of life’s simple pleasures.
I have been making and drinking chai for more than 20 years using a spice and tea blend family recipe that has evolved into a distinctly Bundaberg blend called Lonnie’s Chai (thanks Bunda Ginga).
I grind whole organic spices freshly for each batch for maximum flavour and aroma.
The ritual of making chai is part of the pleasure - all the senses are involved. Taking a little time to stop and stir something in a pan as the flavours start to speak to each other is a daily meditation.

Chilled Chai (Iced Chai) (1-1.5 cups)
1. Place 1 heaped teaspoon of Lonnie’s Chai mix in a jug. Add 1 teaspoon honey and a grating of fresh ginger.
2. Cover with boiling water and infuse for 2 minutes.
3. Top up with 250mls cold milk (soy, cow’s, almond, coconut, macadamia, zymil) and stir.
4. Strain into a tall glass pre-prepared with lots of ice and a scoop of ice-cream (check dairy tolerance if using alternative milk). Lonnie’s home chai tip: make your own frozen “Chai-ce’’ blocks with cold chai and add to glass.
OR make a Chilled Black Iced Chai by topping up with chilled water instead of milk at Step 3 and serve over ice with a fine lemon segment, mint, diced lychee, or fresh lemon grass (let the imagination fly!) Or brew in all water and chill in a jug in the fridge ready to serve.
