I have been making and drinking chai for more than 20 years using a spice and tea blend family recipe that has evolved into a distinctly Bundaberg blend called Lonnie’s Chai (thanks Bunda Ginga).
I grind whole organic spices freshly for each small batch for maximum flavour and aroma.
The ritual of making chai is part of the pleasure - all the senses are involved.
Taking time to stop and stir something in a pan as the flavours start to speak to each other is a daily meditation.
